Banana Chocolate Bran Muffins

Yum - and only 2 points per muffin! ๐Ÿ™‚

1 cup all purpose flour

1 cup all bran cereal

1 tsp baking powder

1 tsp baking soda

1/2 tsp salt

2 tbsp cocoa

1/4 cup margarine

1/2 cup sugar

2 eggs

1/4 cup sour milk (1 tsp vinegar in 1/4 cup milk)

3 medium bananas, mashed (approx 1 cup)

Measure all six dry ingredients in to mixing bowl. Stir to combine. Make a well in the centre.

In seperate bowl cream margarine, sugar and one egg until well blended. Beat in second egg. Mix in sour milk and bananas. Pour all at once in to well. Mix until moistened, ignore lumps. Fill greased muffin pans 3/4 full.

Bake at 400F for 20-25 minutes.

Makes 24 muffins.

I don’t grease the muffin tray, instead I use muffin liners…I like them better but pick whichever way you like best. ๐Ÿ™‚ It’s a super easy recipe that I made for the first time during the ads of a tv show I was watching, lol. If you can make muffins during the ads of a show then it’s gotta be an easy recipe! ๐Ÿ™‚

When I made them it didn’t make 24 muffins, it made 16 but I think that is because I over filled the muffin cups – I have a tendancy to make cookies and muffins and cupcakes a bit larger then recipes usually say to cause I always think a small cookie/muffin/cupcake looks stingy and kinda pathetic. lol.
