Weight Watchers Whipped Fruit Pie

No baking required. 🙂

Ingredients:

half a 12 oz can frozen orange-strawberry-banana juice concentrate, thawed

1 x 8 oz pack fat free cream cheese

1 package (4 x 1/2 cup servings) sugar free instant vanilla pudding mix

1 1/2 cups light whipped topping (aka light cool whip)

1 cup strawberries, chopped

1 reduced fat graham cracker pie crust

 

Directions:

In blender or food processor combine thawed juice, cream cheese and vanilla pudding mix, process until smooth.

Transfer to a large bowl; fold in whipped topping (cool whip) and strawberries.

Transfer to pie crust, spread evenly. Cover and refrigerate until firm, minimum 2 hours.

 

Makes 8 servings, 4 points per serving.

Per serving: 203 calories, 7 grams fat, 1 gram fiber

 

Tips:

– you don’t have to put the first three ingredients in a blender or food processor, I put them in a large bowl and use a hand blender to mix them, worked just fine

– you can use a different flavour of frozen fruit juice, I have been making this pie for years and have never been able to find that flavour of juice, shrug, just pick one you think will go well with strawberries, the most recent time I made this pie I used Orange Guava Passionfruit, yum! 🙂

– be careful when you buy the pudding mix, I accidentally bought the box size for making 6 servings, not 4 and had to measure the mix out so I didn’t use too much – not like that is hard to do just annoying and an extra step that’s not needed if you pay better attention in the store then I did lol

– you’re going to want to use an actual pie scoop thingy to lift each piece out of the dish, you are probably thinking “duh, what else would I use?” but the friend’s place I was at didn’t have one and it’s really hard to get the pie served and looking nice without that triangle shaped serving utensil – it’s because it is whipped, whipped pies don’t hold their shape well once you start serving it

    Woah! I’m really digging the template/theme of this website. It’s simple, yet effective. A lot of times it’s challenging to get that “perfect balance” between user friendliness and appearance.
