Pumpkin Time Has Arrived

I love baking, I don’t generally eat anything that I bake but I love to do the actual baking. 🙂 People always make jokes about what did I put in the baking that I won’t eat it but it’s just that I think baking tastes better if someone else makes it.

October is imo the best month to make things with pumpkin. I know you can make stuff year round with pumpkin thanks to the wonders of canned pumpkin but I like making pumpkin foods only in October, it makes them more of a treat and less of a blah kind of thing, ya know?  

So today I made Soft Pumpkin Cookes, yum! One of the few things I bake and actually like to eat. 🙂 I made them to take to work cause I am getting grief for not bringing in baking as much anymore. I used to take something in once a week or so but that dropped off cause I just didn’t feel like it after a while. shrug. When it became expected I no longer wanted to do it. lol. I am ornery like that! 😛 And really, I shouldn’t have made them this week cause this wednesday, least I think it’s this wednesday, we are having a work potluck and I am bringing in Pumpkin Pie Tarts. Possibly too much pumpkin baking in one week…ah well, it’s done now. lol. Oh, and lemme tell ya, the apartment smells sooooo yummy right now! Mmm!

My first meal of the day today was a late lunch and I was psyched for it, I had a nice big meal planned that would be tasty and that would use a bunch of points, well joke was on me! It was yummy but it only used 8 points, oy! It was a big freshly made turkey sandwich and a bowl of soup. I am not sure why I thought this would be so many points, I think because it is so much food at one time, and really 8 points is a lot of points for one meal but when it’s your first meal of the day and it’s almost 3pm 8 points is not all that bad. heh

So I ate:

1/2 cup Red Pepper Black Bean soup = 1 point

1 turkey sandwich

    – 2 pieces bread = 2 points

    – 1 tbls light miracle whip = 1 point

    – 4 slices turkey = 1 point

    – mustard, lettuce = 0 points

    – 1 cheese slice = 1 point

1 cup 1% milk = 2 points

1 Three Musketeers Single = 2 points

85 grams whole wheat pasta = 5 points

1/2 cup Primo Thick n Zesty Tomato sauce =1 point

2 tbls kraft parmesan cheese = 1 point

1 piece bread = 1 point

1 tsp margarine = 1 point

1 pumpkin cookie = 3 points

Total points used 22. 🙂

I am so freakin tempted to have another cookie but I am not sure if I am going to indulge. I know I have a whole week of flex points open to me but I don’t know that I want to use any today. That potluck I mentioned earlier is (I am almost positive) wednesday and that will use (possibly!) a bunch of points so I want to save them for that day but man, those cookies smell and look good. lol. I just gotta think about wednesday and all the yummy goodness that will be happenin then and use that to help me resist the cookies tonight.

I think though I will save one for myself to have tomorrow for my evening treat after dinner…yeah, I think that’s a good compromise. teehee 😀

    Red Pepper Black Bean Soup sounds freakin’ amazing. Do you have a recipe or do you buy it at the store?

      It is a very yummy soup and so low in points! I did not make it, although I bet if a person put their mind to it they could. However, my mind isn’t going in that direction. lol. It is Campbell’s Gardennay ready to serve soup, it comes in a 500ml box (like an oversized juice box), just heat an eat! 🙂
