Oh Kodiak Cakes, how I will miss you!

Kodiak Cakes, in case you don’t know, are a high protein pancake / waffle mix that make a pretty decent pancake. I don’t have a waffle maker so I can’t say from actual experience how the waffles made with this mix are but I’m sure they are also good.

An Aunt Jemima pancake they are not! Don’t be tricked in to thinking they will be just like the pancakes you get from iHop or that you ate growing up as a kid, before we all got convinced white flour is devil food and never to be touched *rolls eyes*

Despite not being like a “real” pancake, they are good, and a less guilty indulgence on a lazy morning day when you have time and the inclination to whip up some pancake goodness.

Sadly though, I ate my last Kodiak Cake today and will not be buying more. Not because I don’t want to be buying more, but because Costco has stopped carrying them (meanies!) and the closest place to me to buy them is a Safeway that is an hours drive across the border into the States. sigh.

Every time I am in Costco I ask if they have them back yet, maybe nagging them will change their minds?

Kodiak Cakes covered in PB2, Mmm!

So there they are, my last two Kodiak Cakes, I savoured every bite, *wistful sigh* Oh, and no, I don’t eat them with syrup, I regret to inform you I stopped eating syrup due to the high sugar content, ugh, who have I become? ๐Ÿ˜‰ Instead I took two tablespoons of PB2 powder, added water, made it pretty close to peanut butter consistency and spread it on the Kodiak Cakes when they were still hot. It actually tastes good despite my being all whiny that I no longer eat syrup lol I use PB2 on a lot of things, quite the useful little food!

If you live somewhere that still has access to Kodiak Cakes I highly recommend giving them a try, and hey, if you end up not liking them send the rest of the mix to me, I’ll eat it! ๐Ÿ˜‰ lol

Brunch

Alrighty so I’m a tad behind, oops!

Last weekend, thanks to daylight savings time I got to go to Sunday Brunch. ๐Ÿ™‚

This may not seem like a big deal, but you’re probably also a person who has the option of going to Sunday Brunch most Sundays and you decide if you go or not. I never get to go because I work 7am-3pm on Sundays. No brunch for moi.

Anyways! Because of daylight savings my shift and the person who usually works the evening shift on Sunday swapped…I just realized the reason behind why we swapped isn’t self-evident lol I also work Saturday nights until 9pm. I am a night owl so I get home Saturdays, have a cup of tea and a snack, watch some tv or go online or read or whatever. I go to bed between 12am-2am and if I am lucky am asleep by 2:30am, usually I am not lucky and I toss and turn until my alarm goes off at a ridiculous 5:30am. This means on an average, non daylight savings time Sunday I am going about my day with approximately 3 hours of sleep, and not a deep restful sleep but a crappy sleep. I am fine with this, I am used to this, I can totally handle this. Try to take away one of my measly hours of sleep though and I will call out the hounds of hell and make everyone in my little section of the world miserable. Miserable! Hence, the lady who normally works Sunday evenings taking my morning shift, so I don’t kill people from lack of sleep. ๐Ÿ™‚

I didn’t want to squander this rare chance to go to brunch so I texted a couple of friends and off to brunch we went. It was so nice to have a relaxed Sunday morning where someone was serving me instead of me running around like a crazy person because Sundays are busy at my work – and woefully understaffed. *rolls eyes*

We went to toby’s…the lower case ‘t’ is their doing, not me being disrespectful, or ignorant of the rules of capitalization lol

The description on the website says:

“Toby’s, a new and exciting Gastro pub-style restaurant. Industrial style dรฉcor donning old Guiness Factory murals and modern yet nostalgic feel, Toby’s offers Irish and Celtic inspired dishes with an influence of eastern spices along with many vegetarian and gluten-free options.”

I can’t say that it struck me as being overly modern or nostalgic, and I didn’t notice any dishes on the brunch menu that seemed Irish or Celtic inspired lol but that’s just me being difficult. I actually like toby’s. ๐Ÿ™‚

The waitress was a tad slow but friendly, it had a lot of windows so great lighting, a random combination of people (as you’d expect in any restaurant), in general a fun relaxed atmosphere.

I tried to be good and ordered off the “healthy” section, or as they call it “Light Fare Breakfast”. My meal was deeeelish but there was nothing light about it lol

I ordered the Banana Pecan Buckwheat Pancakes – it came with 4 turkey bacon strips and 2 scrambled egg whites for $8.75.

I drowned the pancakes in syrup cause that is my way and oh man was the whole thing amazingly tasty! I ate the eggs and turkey bacon first, figuring I should fill up on the healthy part of the meal before chowing down on pancakes lol I am a sucker for pancakes, Mmm! I enjoyed how the addition of the sliced banana let me delude myself in to thinking the meal was healthy. ๐Ÿ˜›

Buckwheat pancakes, go figure. I had no idea what I was getting in to, I had horrible visions of super dry gross pancakes, but if you hadn’t told me they were buckwheat I can’t say for certain I would have noticed anything different about them. I’m not entirely certain what buckwheat is, I have to find time to google it, and I’m not sure why using buckwheat makes the pancakes miraculously healthy but hey, I’ll take it!

Those Sooooo Weren’t Healthy

I had the most oddly delish pancakes today, Mmm!Mmm!Mmm! ๐Ÿ˜€

I went for brunch and got Pear and Coconut Pancakes – pear and coconut infused pancakes, topped with sauteed pears, a lime mascarpone cream and drizzled with house made vanilla syrup. There were 4 nice an thick pancakes on the plate when it was served – can anyone say “goodbye flex points and daily points!” oh, don’t forget to wave madly as the points go bye-bye lol. ๐Ÿ˜‰

After eating 2 of them nice n slow so I could savour them I was stuffed, hmm, that should be Stuffed with a capital S cause man I was sooooooo stuffed. After two pancakes! Crazed! I was grateful though cause not like those suckers are good for me in any way. lol. I ate the remaining 2 later in the evening for dinner and that was my entire food allotment for the day…not including a hot chocolate (so shoot me, it was chilly out!), a cup of tea, some diet coke and now some water…least I got some fluids in there…right?

I just did a points check on the pancakes and frankly, I think I was better off not knowing – what the hell does the restaurant put in those things? OMG. The fiber is 5, so yah! The caloriesย are 1170, so holy F! And the Fat is 56, kill me, *groan*. That is a whopping 27 points, 27! It’s like I can feel my arteries clogging up a little bit more with each passing minute and my ass getting wider the longer I sit here and type. *double groan*

How do people go to brunch every week and not get obese? ugh.

We did go for a walk after brunch, we were both full and wanted to walk it off a bit, it was a very slow walk, we didn’t go all that far and we stopped and just watched the boats on the water and the moutains in the distance for a good chunk of it…so really, I guess we didn’t walk so much as meandered then paused then meandered to the little shop we got our hot chocolate from lol. Does meandering count in the battle to burn off the amazingly high amount of calories just eaten? I feel it should but I’m pretty certain that is wishful thinking lol. ๐Ÿ˜‰

I had intended to exercise in the afternoon but that didn’t happen, sigh, so I’m for sure gonna hafta do something tomorrow to make up for this disaster. *rolls eyes* I hate make-up-for-disaster-food-days exercise routines, they are always harder, double sigh.

I haven’t really started tracking yet even though my life is getting a little bit more settled since the move…the oven still doesn’t work, huh, just remembered that, I’ll hafta call the building manager tomorrow…but despite the slightly more settled aspect to my life I am still not tracking, still not exercising (except for boxing twice a week – and only once last week cause of the holiday) and still not eating properly…I know this even though I am not tracking cause I am at least sorta trying to track in my head and everyday I know I am not doing a very good job food wise. blarg.

I think tomorrow will have to be a fresh start, I’ll start tracking again, start making healthier food choices, start exercising in some manner everyday…just start doing all the things I know I am supposed to be doing but stopped cause of the move.

So, since tomorrow is a fresh start I think I will no longer regret those yummy pancakes, they were unknowingly my last hurrah before getting down to the serious business of making myself thinner before I go home for Christmas! Only 36 more days…crap! Only 36 more days??? I didn’t realize it was so close! This really is crunch time! lol ๐Ÿ˜‰
